AFRICAN PEANUT SOUP

So I haven’t taken a poll or anything but I feel like African Peanut Soup is either a love it or hate it kind of food. It has a very distinct and strong flavor and I can see how someone wouldn’t like it, especially if you don’t like peanut butter. But if you love peanut butter, then this soup is probably for you. And when I eat it, I feel like I should be sitting on the African plains watching zebra run by. It kind of has an earthy taste to it. Maybe it’s just all the peanut butter, haha.

AFRICAN PEANUT SOUP

INGREDIENTS
-6 cups vegetable broth
-1 medium red onion, chopped
-2 T. minced fresh ginger
-5 cloves garlic
-1 tsp salt
-1 tsp sugar
-1 bunch of chopped kale
-1 cup unsalted peanut butter (smooth or chunky)
-1 6oz can tomato paste
-1 14oz can diced tomatoes
-Sriracha for some spice

GARNISH
-1/4 cup chopped peanuts
-cilantro

DIRECTIONS
1. In a medium Dutch oven or stock pot, sauté onion, ginger, and garlic. Add salt.
2. Add vegetable broth and diced tomatoes and simmer on medium-low heat for 15-20 minutes.
3. In a glass bowl, combine the peanut butter and tomato paste, and 2 cups of the hot stock to the bowl. Whisk the mixture together until smooth then return to the pot. Mix well.
4. Add the kale, sugar, and sriracha (if desired). Simmer for about 15 more minutes on medium-low, stirring occationally. Serve over cooked brown rice for a heartier meal.
5. Garnish with chopped peanuts and cilantro
