ZUPPA TOSCANA SOUP

ZUPPA TOSCANA SOUP

Ingredients:
-1 yellow onion
-3 garlic cloves, minced
-1-1.5 lb Italian sausage
-salt
-pepper
-1 Tbs Trader Joe’s 21 seasoning salute
-4 medium russet potatoes, diced
-6 cups chicken broth
-8 cups chopped kale
-1 cup cashew cream (or heavy cream if you can have dairy)

Directions:
1. Heat 2 T. avocado oil in a large pot (I use a dutch oven). Add onions, salt, and pepper and sauté till soft and lightly golden. Add in garlic and stir well.
2. Add in sausage and stir occasionally till meat is cooked through.
3. Add chicken broth and potatoes.
4. Cover and let simmer for about 15-20 minutes or until potatoes are soft.
5. Add in cashew cream and chopped kale. Stir well. Top with sriracha if you want a little kick to yours.
