ZUPPA TOSCANA SOUP

ZUPPA TOSCANA SOUP

Ingredients:
-1 yellow onion
-3 garlic cloves, minced
-2 squash, diced
-2 zucchinis, diced
-1 cup chopped mushrooms
-salt
-pepper
-1 T. cumin
-1 T. curry powder
-2 tsp. sriracha sauce (more or less)
-5 small or 3 large russet potatoes, diced
-10 to 12 cups chicken broth
-8 cups chopped kale
-1 1/2 cups heavy cream

Directions:
1. Heat 2 T. olive oil in a large pot (I use a dutch oven). Sautee onions till soft and lightly golden. Add in garlic and stir well.
2. Add zucchini, squash, and mushrooms. Season with salt, pepper, cumin, and curry powder. Stir until the edges start to become golden.
3. Add potatoes, kale, and vegetable broth. (Make sure you have enough broth to cover all your vegetables)
4. Cover and let simmer for about 30 minutes or until potatoes are soft.
5. Add in heavy cream, sriracha, and some more salt and pepper. Stir well.
