WHITE CHOCOLATE CHIP CRANBERRY BARS

I LOVE fall and everything it brings about: scarves, boots, snuggling on the couch with hot cider, blustery days (well not really in San Diego), the holidays, time with family, sweet potato casserole, red cups at Starbucks, and cranberries. I LOVE cranberries. I mean let’s be honest, how can you look at a bowl full of cranberries and not smile. They’re so colorful and make the most delicious desserts in the “-er” months. So when those gorgeous organic cranberries hit the shelves at Trader Joe’s, you better believe I’m filling my cart with them, mostly so I can make these cranberry bars on the daily. Once you try one you’ll understand. So do yourself a favor and get your hands on a bag a cranberries before they go out of season and make these tasty little treats. I can’t even tell you how many times I’ve given out this recipe because people couldn’t get over. It’s something about the sweetness of the white chocolate chips and the tartness of the cranberries. Oh and for those of you who love the Starbucks seasonal cranberry bliss bar, you’ll love this even more.

White Chocolate Chip Cranberry Bars > Grace and Salt-28

Ingredients:

-1/2 cup (1 stick) butter, softened
-1/2 cup sugar
-1/4 cup brown sugar, packed
-1 cup flour
-1 cup quick oats
-1/4 tsp baking soda
-1/4 tsp salt
-1 cup white chocolate chips

Cranberry mixture:
-2 cups fresh cranberries
-1/4 cup water
-1/4 cup sugar
-1 tsp vanilla

Directions:

-Pre-heat oven to 350 degrees. Grease 9×9 baking pan with coconut oil spray.
-Beat butter, sugar, and brown sugar in a mixer until fluffy. Gradually add flour, oats, baking soda, and salt.
-Mix until mixture is the consistency of crumbs. Add in white chocolate chips and mix.
-Reserve 1  cup of the mixture to use as the topping. Firmly press remaining mixture evenly into prepared pan. Bake 15 minutes.
-Meanwhile, in a medium saucepan, combine cranberries, sugar, and water. Cook over medium heat, stirring occasionally, until mixture boils. Reduce heat; simmer about 5 minutes, stirring occasionally.
-Remove from heat. Stir in vanilla. Spread evenly over baked layer. Sprinkle reserved mixture evenly as a topping.
-Return to oven and bake 15-20 minutes. Cool completely and cut into bars.
