LOW CARB GRANOLA BITES

Most breakfast foods are pretty high in carbs thanks to flour, oats, and sugar but we didn’t let that stop us from coming up with these amazing low carb granola bites. And check out those Dexcom lines after eating these little delights. This is just a warning: these are addicting! Try and not eat the whole batch.

We eat them on their own for a snack our put them on top of some yogurt with a spoonful of nut butter.

INGREDIENTS:

½ cup shredded unsweetened coconut
¼ cup sunflower seeds
¼ cup pecans, chopped
¼ cup sliced almonds
2 Tbs chia seeds
2 Tbs hemp seeds
2 Tbs coconut oil or grass fed butter, melted
2 Tbs granulated erythritol
½ tsp cinnamon
Pinch of sea salt
¼ cup Sukrin fiber syrup

DIRECTIONS:

  1. Preheat oven to 350 degrees.
  2. In a mixing bowl, mix all the nuts, cinnamon, sea salt, erythritol, and melted coconut oil/butter. Add the fiber syrup and mix until everything is coated well.
  3. Spoon into the little cups of the silicone mold.
  4. Bake at 350 for about 15-20 minutes or once coconut gets slightly golden brown.
