COWBOY CAVIAR

Okay, so how many of you are just as obsessed with the cowboy caviar from Trader Joes as I am? Except I’m not in love with the $3 per jar price because of HOW MUCH we eat this stuff, so I set out to make my own that’s cheaper and fresher. And I pretty much nailed it!

Cowboy Caviar

-3 Roma Tomatoes, diced

-1 15oz can of black beans

-1 15oz can of corn

-1/3 cup chopped cilantro

-1/4 cup chopped green onions

-1/4 cup chopped red onion

-1 large avocado, diced

-1 chipotle pepper in adobo sauce, seeds removed

-6 drops lime essential oil (or juice of 1 lime)

-1/8 cup olive oil

-1 T. cumin

-1 tsp tsp cayenne pepper

-1 T. sugar

-salt

-pepper

*You can adjust the amount of cayenne pepper depending on how spicy you want it. Enjoy!
